典故传说

山西本身是中国文化最古老的省,春秋战国时候,当南方还是一片蛮荒的时候,山西已经有个晋国了。历史上好多朝代都从山西发家,例如唐朝、宋朝。

山西面食历史悠久,源远流长,从可考算起,已有两千年的历史了,称为“世界面食之根”。焖面是中国中部和北部地区的特色传统面食小吃,流行于山西,陕西,河南,河北,北京等长江以北大部分地区。

Legends and allusions:

Shanxi with long cultural history is one of the oldest

provinces in China. During the Spring and Autumn periodand the

warring states period, Jin Kingdom was established a state in

Shanxi, however, when the southern area was still viewed as

faraway and uncivilized is well known that Tang and

song dynasties found a state from the beginning of Shanxi.

Shanxi noodleswith a long history of two thousand years

were known as the basis of cooked wheaten food in the World.

Braised noodles are popular in Shanxi, Henan, Hebei, Beijing

and most areas north of the Yangtze River,as a traditional noodle

food.

主料:面,豆角

配料:香菇,葱,姜,蒜

调料:盐,酱油,醋,花椒,大料,鸡精,十三香

Main ingredient: flour,long bean

Minor ingredient:mushroom, onion, ginger, garlic

Seasoning:salt, soy sauce, vinegar, Sichuan pepper,star anise,

thirteen-spices

菜品特点:

1.面条筋韧,豆角脆嫩

2.咸香味浓,食之利口

制作方法:

1. 先将面活好醒30分钟,这样面才能有嚼劲,等醒面的时间来调一碗汁:盐、鸡精、十三香粉、酱油、葱花、蒜末、醋;

2. 面醒好后、揉匀,开始擀面,然后切成面条状

3. 豆角洗净后,控干水分,用手掰成1里面左右长的段;

4. 热锅凉油、并放入花椒、大料少许;

5. 放入豆角先炒2分钟、再加入香菇、同时加适量盐;

6. 等菜炒到5-6成熟时,加开水,不要完全没住菜;

7.同时将擀好的面条均匀的铺在菜上,盖上锅盖开始焖至面熟;

8. 面焖好后浇入刚才调制的汁;

9. 面和菜搅拌均匀,关火,再放入蒜和醋。

Making Methods

6. Add the hot water when the boil is not completed. The

green beans don’t fully cover with water.

7. Put these noodles at the top of longbeans, and cover it

until boil completely.

8. Pour in sauces after finish.

9. Stir and mix with vegetables and noodles, and then add

some garlics and vinegar.
